Classic Buttermilk Biscuit flavor and texture in a Keto friendly recipe.
Spray muffin tin with cooking spray. Set aside.
Using a hand mixer, beat egg whites on high speed until stiff peaks form – about 3 minutes. Set aside.
In another bowl, use a flour sifter to sift almond flour, baking powder and buttermilk powder.
Use a pastry cutter / dough blender, cut in cold butter and salt until mixture is uniform and very crumbly. This will take about 3 minutes of chopping/blending.
Using a scraping spatula, gently fold dry mixture into the egg whites.
Spray spoon with cooking spray and scoop batter into muffin tin – dividing equally.
