
Bon Appe Keto Buttermilk Breakfast Biscuits
The classic Buttermilk Biscuit is an American original dating back to the early 19th century, before the American Civil War. Cooks created a cheep addition to meals requiring no yeast. Biscuits became a hit because they held their shape better than slices of bread while whipping up gravy. Biscuits & Gravy are still a staple in the American South to this day.

- 1 cup Almond Flour - sifted
- 1 tsp Baking Powder
- 2 tsp Buttermilk Powder
- 4 Egg Whites
- 2 Tbsp Kerrygold Butter - VERY COLD
- 1/4 tsp Himalayan Pink Salt
- Coconut or Avocado Oil Cooking Spray

Instructions
- Spray muffin tin with cooking spray. Set aside.
- Using a hand mixer, beat egg whites on high speed until stiff peaks form – about 3 minutes. Set aside.
- In another bowl, use a flour sifter to sift almond flour, baking powder and buttermilk powder.
- Use a pastry cutter / dough blender, cut in cold butter and salt until mixture is uniform and very crumbly. This will take about 3 minutes of chopping/blending.
- Using a scraping spatula, gently fold dry mixture into the egg whites.
- Spray spoon with cooking spray and scoop batter into muffin tin – dividing equally.
- Bake for 10 to 13 minutes – check after 10 minutes for light browning.
