Keto Breaded Chicken Schnitzel is delicious all on its own, in a sandwich or served with yummy sauces. It is the base of my Keto Chicken Parmesan, and Chicken Bacon Ranch Wraps.

Instructions
  1. Filet chicken breasts into slices that are about ¼” thick.
  2. Using a meat tenderizing mallet, gently pound meat working in a circle from the center outwards until meat is uniform in thickness. Use a zip closure plastic bag to make this less messy, by placing the chicken inside the bag and then use the mallet to pound it.
  3. Set meat aside.
  4. Crush pork rinds in a blender or food processor, and place into a mixing bowl.
  5. Add, Italian Seasoning, Parsley, Garlic Powder, Onion Powder and Parmesan Cheese into bowl with crushed pork rinds and whisk until well combined.
  6. In a separate bowl gently beat eggs.
  7. Put coconut flour into a third container (make sure this is wide enough to dredge the meat through).
  8. Now make an assembly line: 1st container has the coconut flour, 2nd container has the beaten egg and the 3rd container has the pork rind mixture.
  9. Special note, I’ve found it very helpful to wear latex gloves and use tongs when dipping the meat into the egg mixture.
  10. Working with one piece of meat at a time, dredge it through the coconut flour, then dip into the beaten egg, and finally coat the meat by dropping it into the pork rind mixture, covering it with the pork rinds and press firmly – flipping it over and doing the same to both sides. Place the “breaded” meat on a large plate and repeat for all pieces.
  11. Pour oil into a large fry pan or skillet. Heat on medium high.
  12. Place meat in a single layer into heated oil. Cook on each side for 3-4 minutes. Do not stack pieces on top of each other. You will need to run several batches, and may need to add additional oil to your pan so keep it handy.
  13. Remove meat from fry pan and place on paper towel lined plate to drain off excess oil.

Recipe Notes

This can easily be frozen in zip-top freezer bags for up to 3 months and will keep in the refrigerator (in air tight bags or containers) for up to 7 days. I make this in very large batches as it’s a staple in our home and use the Food Saver System to make sure it retains the best possible flavor.
