French Toast, known as “pain perdu” which means “lost bread”, and dates back many centuries. French Toast was originally a way to make use of stale bread that would have otherwise been thrown away.
Bon Appe Keto French Toast
This recipe starts with a KETO friendly sweetened 90 second bread dipped in an egg mixture, then fried in golden butter producing the exact texture and taste of traditional French Toast.
In a small, microwave safe bowl, whisk together 1 egg, almond flour, baking powder, melted butter, 2 tsp Swerve, cinnamon and vanilla extract. Whisk for about 1 minute until very well combined.
Place bowl in microwave for 90 seconds.
Remove bowl and let rest for about 1-2 minutes.
Flip bowl over and remove the bread.
Using a bread knife, cut bread in half, creating two slices.
In a small mixing bowl, whisk together 1 egg, heavy cream, and 1 Tbsp of Swerve. Beat until very well combined.
Melt butter in griddle over medium-high heat.
Using tongs, dip one slice of bread into the egg mixture, making sure both sides are coated, and transfer to hot griddle. Repeat with the second slice.
Cook for about 2 minutes or until golden brown.
Using a turning spatula, flip the bread over and continue cooking for 1-2 minutes.
