
Bon Appe Keto Fudgy Brownies
The beloved brownies is a truly American treat, invented in Chicago in the late 1890’s. According to legend, a prominent socialite who’s husband owned the Palmer House Hotel, asked a pastry chef to come up with a dessert suitable for the ladies attending the Chicago World’s Columbian Exposition of 1893. She requested a cake-like treat that could be included in a boxed lunch. The Palmer House Brown is still served in the hotel to this day in its original form with walnuts and apricot glaze.
By the turn of the century, chocolate brownie recipes and vanilla versions known as “blondies” began appearing in many popular cooking books throughout America. While the brownie has evolved quite a bit over the last 120 years, the best version yet is the Bon Appe Keto Fudgy Brownie, because you can enjoy them any time while maintaining a healthy Keto lifestyle.

- 1 Tbsp Kerrygold Butter for greasing pan
- 56 g Kerrygold Butter melted
- 3 Eggs large
- 140 g Swerve - granular
- 1/2 tsp Vanilla Extract
- 50 g Almond Flour
- 28 g Cacao Powder
- 1 Tbsp Unflavored Gelatin
- 1/2 tsp Baking Powder
- 1/4 tsp Himalayan Pink Salt fine
- 1/4 cup Water
- 84 g Pecans chopped
- 1 bar ChocoPerfection Milk Chocolate chopped into small chunks
Ingredients

- Preheat oven to 350F
- Grease 9×9 brownie pan with butter.
- Chop ChocoPerfection Bar, and pecans into small chunks – set aside.
- In a mixing bowl, add eggs, vanilla, butter and Swerve. Whisk until well combined.
- Add almond flour, cacao, gelatin, baking powder, salt and water. Whisk until well combined.
- Using a spatula, stir in ChocoPerfection chunks and pecans.
- Pour batter into baking pan and bake for 15-20 minutes. Watch for edged to be well formed and middle to be a little soft.
- When removing, allow to sit for 5 minutes.
- Cut into squares.
