Bon Appe Keto No Bake Cheesecake
This recipe makes 2 mini cheese cakes that each contain 2 servings.
In a small frying pan, toast almond flour over medium heat for about 5 minutes, stirring occasionally.
Place toasted almond flour, melted butter, granular swerve and cinnamon into a mixing bowl and stir until well combined.
If making cupcake sized cheesecakes, place 1 cookie scoop of almond flour mixture into each cupcake liner and press into bottom evenly.
If making mini pies, place 3 cookie scoops of almond flour mixture into each mini pie tray and press into bottom and up sides of tray.
Use a stand mixer and beat cream cheese, swerve and vanilla until smooth – about 2 minutes.
In another mixing bowl, beat whipping cream with hand mixer for about 2 minutes.
Add whipped cream into the cream cheese mixture and continue beating for about 3 minutes.
Scoop cheesecake mixture into cupcake shells or into mini pie trays.
This recipe yields 12 cup cakes or 4 mini pies.
For single serve, the cupcake sized options is perfect. Simply add your favorite toppings and enjoy.
