- 8 oz Cream Cheese - softened
- 4 oz Kerrygold Butter - softened
- 1/2 cup Swerve - powdered
- 1 1/2 tsp Vanilla Extract
- 1/4 cup Pic's Peanut Butter
- 1 bar ChocoPerfection Milk Chocolate - diced into chunks

Pre-Preparation
- Leave butter out for at least 2 hours to soften.
Preparation
- Chop chocolate bar into small chunks – you should yield about 100 chunks from one 3oz bar. Line a baking tray with parchment.
- In a medium sized mixing bowl, use a hand mixer and beat together Cream Cheese, Butter and powdered Swerve until well combined. Scrape the bowl with spatula.
- Add in Vanilla and Peanut Butter – continue mixing until you see an even and consistent color.
- With a wooden spoon, stir in Chocolate Chunks. Mix until chocolate is evenly distributed.
- Use a cookie scoop to make cookie dough into balls and place on parchment lined baking tray.
- Freeze for 2 hours.
- Remove from freezer and store balls in air tight container in the refrigerator (up to 1 month) or freezer (up to 3 months – as if they’d last that long!).
