Sauerkraut is one of those dishes that is bigger than any one country, getting is’s start in several parts of the world.  So too is the humble Kielbasa.  This u-shaped, pork sausage has been traced to Poland but is a staple in many countries including Bosnia & Croatia (klobása), Hungary (Kolbász),  Russia & the Ukraine (колбаса).

Instructions
  1. Drain liquid from sauerkraut by pouring it into a colander or strainer over your sink.
  2. Gently squeeze to remove any remaining liquid. You may rinse it with water and squeeze again if you prefer a less sour taste.
  3. Add all ingredients to medium sauce pan and stir a few times until gently mixed.
  4. Cover and bring to boil, then reduce heat to medium low and simmer for 20 minutes.
  5. Bon Appe Keto!

Finding pre-packaged meats like Kielbasa in America is not easy.  You have to read the package carefully to avoid toxins and sugars which are often used as preservatives.   Here are a few options that are Keto friendly and and toxin free:
