
Bon Appe Keto Sweet and Sour Chicken
While not the most authentic Chinese dish, this Western Sweet and Sour Chicken recipe is similar to those served in restaurants throughout Australia, Europe, North America & South America. Most restaurants serve a bright red sauce that get’s it’s tone from food coloring. The sauce below is clear because there are no additives that could potentially throw you out of ketosis. Close your eyes and you’ll think this was take-out from your favorite local haunt.

Ingredients
The Chicken
- 1 lb Boneless Skinless Chicken Breast
- 2 Tbsp Xanthan Gum
- 1/4 tsp Himalayan Pink Salt
- 1/4 tsp Ground Pepper
- 1/2 cup Kerrygold Butter ,Olive Oil (not EVOO), Ghee or Coconut Oil for frying
The Sauce / Marinade
- 2 Tbsp Kerrygold Butter
- 3/4 cup Yellow Onions -diced
- 1 Tbsp Ginger - minced
- 3 Tbsp Swerve - granular
- 3 Tbsp Braggs Apple Cider Vinegar
- 1/2 tsp Xanthan Gum
- 1/2 cup Kettle & Fire Beef Bone Broth
- 1/4 tsp Himalayan Pink Salt
- 1/2 Green Pepper - cut in 1" chunks
- 1/2 Red Pepper - cut in 1" chunks
- 1/4 Yellow Pepper - cut in 1" chunks

Instructions
For Chicken
- Cut chicken breast into approximately 1.5” chunks.
- Place cut chicken into a zippered plastic bag (less mess), or bowl and sprinkle with salt, pepper and xanthan gum. Mix until evenly coated.
- Remove from heat and set aside.
For Sauce / Marinade
- Dice Onion and mince Ginger.
- Heat Butter in a small sauce pan over medium-high heat until melted.
- Stir in diced Onion and minced Ginger, and sauté for about 5 minutes, stirring frequently.
- Add Swerve, Vinegar, Bone Broth, Xanthan Gum and Salt. Mix well and reduce heat to medium low. Let simmer uncovered for about 5 minutes.
- Cut Peppers into 1” chunks and mix into the sauce.
- Remove from heat and let sit, covered for about 5 minutes.
- Combine the sauce and the chicken, giving it a good mix to thoroughly coat.
